Stuffed Peppers in Tomato Sauce

Fill, simmer, done! Here’s a very simple, vegan, and delicious recipe for stuffed peppers.


Ingredients


Peppers and Sauce:

  • 3 large bell peppers
  • 1 tbsp margarine
  • 500ml vegetable broth
  • 1 tbsp flour
  • 1 tsp sugar
  • 4 large tomatoes
    • Alternatively: 3-5 tbsp tomato paste
  • 1-2 tsp lemon juice
  • Salt & pepper
  • 3 bay leaves

Filling:

  • 50g dried soy granules
    • Alternatively: 150g vegan ground meat
  • 3 tbsp rice
  • Salt & pepper
  • 100g corn or kidney beans

Preparation


First, soak the soy granules in a bowl of hot water. After 10 minutes, drain the soy in a sieve and press with a spoon to remove excess water.

Sauce:

Prepare the sauce in a pot large enough to accommodate the stuffed peppers later. Follow these steps:

  1. Melt margarine over medium heat.
  2. Add 500ml vegetable broth to the pot.
  3. Sprinkle flour into the pot.
  4. Crush the tomatoes and add them to the pot.
  5. Add salt, pepper, sugar, and lemon juice.
  6. Tear bay leaves at several places and add them to the sauce.
    • Be careful not to let the leaves fall apart.
  7. Stir the sauce by hand and let it simmer over medium heat.
  8. Optionally, you can add a few tablespoons of rice to the sauce.

Stuffed Peppers:

While the tomato sauce is simmering, prepare the stuffed peppers. Cut a circular hole around the stem of each pepper. Remove the inner part containing seeds. It’s okay if you accidentally cut through the pepper—it won’t affect the recipe.

Next, rinse the peppers inside and out. Then mix all the ingredients for the filling and stuff the peppers tightly. Fill them up to the top.

Simmer in the Pot:

Once all the peppers are stuffed, place them in the sauce and let them simmer over medium heat. Cover the pot and wait. Occasionally, turn the peppers in the sauce and spoon some sauce over them. If the sauce thickens too much or the rice absorbs all the liquid, you can add a bit more water. After 30-40 minutes, the stuffed peppers should be cooked through.

Serve:

Before serving, remember to remove the bay leaves from the sauce. Alongside the stuffed peppers and sauce, we also like to serve some cream. There are good vegan alternatives available now.

You’ll likely have some filling left over, as peppers come in different sizes and shapes. You can add the remaining filling to the pot and cook it together with the stuffed peppers in the sauce.
