Potato Pancakes & Homemade Applesauce

A true classic among potato dishes: potato pancakes with applesauce. This hearty dish is a real treat for the taste buds!


Ingredients


Potato Pancakes:

  • 1.5 kg potatoes
  • 3 tbsp flour
  • ½ tbsp salt
  • Oil

Applesauce:

  • 1 kg apples
  • 2-4 tbsp sugar (use less sugar if the apples are sweet)
  • 100ml water
  • 2 tbsp lemon juice

Preparation


Applesauce:

  1. First, peel all the apples and remove the core from the middle. By the way, you don’t have to throw away the apple scraps! They can be dried and used as tea.
  2. After peeling, cut the apples into small pieces and put them in a pot along with the other ingredients. Let the applesauce simmer on medium heat for about 20 minutes.
  3. After cooking, you can mash the applesauce so it is not too chunky.

Storing:

If you want to store your applesauce, you can easily keep it in a mason jar. It will last about 3-4 months. For storage, clean and disinfect the jar and lid. You can do this by holding the open jar and lid over a boiling pot to treat them with the hot steam.

The applesauce must be poured hot into the jar and then briefly turned upside down. After five minutes, you can turn it back and store it, preferably in a cool and dark place.

Potato Pancakes:

  1. Before you start, wash the potatoes thoroughly. After washing, peel and grate the potatoes. Of course, a food processor can also help with this task.
  2. Once you have grated the potatoes, you can put them in a bowl and add the flour and salt. Mix the raw potato mixture well and stir occasionally.
  3. Then put plenty of oil in a large pan and heat it on medium. Using a tablespoon, you can now place two heaping tablespoons of the raw “potato dough” into the pan and form round potato pancakes.
  4. To keep the potato pancakes from falling apart, they should be turned as little as possible. Also, make sure they are not too thick, otherwise they will be raw inside and burnt outside. When the potato pancakes are golden brown on both sides, you can place them on a plate and serve with the applesauce.
